Mexican Chicken Lettuce Wraps

Ingredients

  • 1 lb ground chicken
  • ½ small onion, minced
  • ½ Tbsp olive oil
  • 1 (1.25-oz) envelope salt-free taco seasoning
  • ¾ cup water
  • ¼ tsp salt
  • 8 romaine lettuce leaves

Instructions

  1. Cook chicken and onion in hot oil in a large nonstick skillet over medium heat 8 minutes or until browned.
  2. Add taco seasoning and water, stirring to combine. Cook 3 minutes or until slightly thickened; stir in salt.
  3. Fill lettuce leaves with chicken mixture.

Side Dish Ingredients

  • ¼ cup extra virgin olive oil
  • 2 Tbsp honey
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • 1 Tbsp chopped chipotle peppers in adobo sauce
  • 1 (10-oz) pkg tricolor coleslaw

Side Dish Instructions

  1. Whisk together oil, honey, lime zest, lime juice, and chipotle peppers in a serving bowl. Add slaw; toss.
  2. Serve slaw in lettuce wraps with chicken mixture.
