Mexican Chicken Lettuce Wraps
Chipotle-Lime SlawIngredients
- 1 lb ground chicken
- ½ small onion, minced
- ½ Tbsp olive oil
- 1 (1.25-oz) envelope salt-free taco seasoning
- ¾ cup water
- ¼ tsp salt
- 8 romaine lettuce leaves
Instructions
- Cook chicken and onion in hot oil in a large nonstick skillet over medium heat 8 minutes or until browned.
- Add taco seasoning and water, stirring to combine. Cook 3 minutes or until slightly thickened; stir in salt.
- Fill lettuce leaves with chicken mixture.
Side Dish Ingredients
- ¼ cup extra virgin olive oil
- 2 Tbsp honey
- 1 tsp lime zest
- 2 Tbsp lime juice
- 1 Tbsp chopped chipotle peppers in adobo sauce
- 1 (10-oz) pkg tricolor coleslaw
Side Dish Instructions
- Whisk together oil, honey, lime zest, lime juice, and chipotle peppers in a serving bowl. Add slaw; toss.
- Serve slaw in lettuce wraps with chicken mixture.
