Oat and Coconut Granola Cups
Vanilla Yogurt and Berries
Ingredients
- 1½ cups old-fashioned oats
- ⅓ cup unsweetened flaked coconut
- 2 Tbsp honey
- 1½ Tbsp olive oil
- ¼ tsp ground cinnamon
- ⅛ tsp salt
- 1 large egg white, lightly beaten
Instructions
- Preheat oven to 350°F. Stir together oats, coconut, honey, oil, cinnamon, and salt. Add egg white, stirring to combine.
- Press mixture into bottom and up sides of 12 lightly greased mini muffin cups.
- Bake 10 to 15 minutes or until golden brown. Let cool in pan 20 minutes. Serve 2 cups per person.
Side Dish Ingredients
- 2 cups less-sugar vanilla Greek yogurt (see Note)
- ½ cup raspberries
- ½ cup blueberries
Side Dish Instructions
- Spoon yogurt into each granola cup. Top with berries.
