Oat and Coconut Granola Cups

Ingredients

  • 1½ cups old-fashioned oats
  • ⅓ cup unsweetened flaked coconut
  • 2 Tbsp honey
  • 1½ Tbsp olive oil
  • ¼ tsp ground cinnamon
  • ⅛ tsp salt
  • 1 large egg white, lightly beaten

Instructions

  1. Preheat oven to 350°F. Stir together oats, coconut, honey, oil, cinnamon, and salt. Add egg white, stirring to combine.
  2. Press mixture into bottom and up sides of 12 lightly greased mini muffin cups.
  3. Bake 10 to 15 minutes or until golden brown. Let cool in pan 20 minutes. Serve 2 cups per person.

Side Dish Ingredients

  • 2 cups less-sugar vanilla Greek yogurt (see Note)
  • ½ cup raspberries
  • ½ cup blueberries

Side Dish Instructions

  1. Spoon yogurt into each granola cup. Top with berries.
