Ingredients

  • 1½ lb boneless pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup butter, softened
  • 2 Tbsp chopped fresh rosemary

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with salt and pepper.
  2. Cook pork in hot oil in a large cast-iron skillet or ovenproof skillet over medium-high heat 2 to 3 minutes per side or until browned.
  3. Stir together butter and rosemary; spread over pork. Bake 10 minutes or until pork is done.

  • 3 peaches, peeled and sliced
  • ½ cup chopped walnuts
  • ½ cup crumbled feta cheese
  • ⅓ cup olive oil vinaigrette
