Chicken Caprese Pasta

Ingredients
- 4 oz gluten-free penne pasta (or use bow-tie pasta or elbow macaroni)
- ½ lb boneless, skinless chicken breasts
- 2 tsp salt-free Greek seasoning
- 2 tsp olive oil
- ½ cup balsamic vinaigrette
- 1 Roma tomato, chopped
- 3 Tbsp thinly sliced fresh basil
- ½ cup cubed mozzarella cheese (or use crumbled feta)
Instructions
- Cook pasta according to package directions.
- Meanwhile, pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with seasoning.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until done. Slice chicken.
- Toss pasta with vinaigrette, tomato, basil, and cheese. Divide among 2 plates; top with chicken.
