Chicken Caprese Pasta

Ingredients

  • 4 oz gluten-free penne pasta (or use bow-tie pasta or elbow macaroni)
  • ½ lb boneless, skinless chicken breasts
  • 2 tsp salt-free Greek seasoning
  • 2 tsp olive oil
  • ½ cup balsamic vinaigrette
  • 1 Roma tomato, chopped
  • 3 Tbsp thinly sliced fresh basil
  • ½ cup cubed mozzarella cheese (or use crumbled feta)

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with seasoning.
  3. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until done. Slice chicken.
  4. Toss pasta with vinaigrette, tomato, basil, and cheese. Divide among 2 plates; top with chicken.
