Skillet Meat Loaf Patties
No-Boil Mac and Cheese and Steamed PeasIngredients
- 2 lb ground beef
- 1 (6-oz) can tomato paste, divided
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs
- 4 Tbsp Dijon mustard, divided
- 3 Tbsp Worcestershire sauce
- 2 Tbsp brown sugar
Instructions
- Stir together beef, 3 Tbsp tomato paste, eggs, breadcrumbs, 2 Tbsp mustard, and Worcestershire. Season with salt and pepper, if desired. Shape into 6 patties.
- Stir together sugar, remaining tomato paste, and 2 Tbsp mustard in a small bowl.
- Cook patties in a large skillet over medium heat 5 minutes. Flip patties, and brush with sugar mixture. Cook 5 minutes or until centers are no longer pink.
Side Dish Ingredients
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 2 cups low-sodium chicken broth
- 1 cup milk
- ½ (16-oz) pkg elbows macaroni
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 (10-oz) pkg frozen green peas
Side Dish Instructions
- Preheat oven to 400°F. Melt butter in an oven-safe skillet over medium heat. Add flour and cook, whisking constantly 2 minutes.
- Gradually whisk in broth and milk. Cook 10 minutes, whisking occasionally, until slightly thickened. Stir in uncooked pasta and cheeses; cover tightly with foil.
- Bake 25 minutes; uncover and stir well. Bake 15 to 20 minutes longer or until mixture is thickened and pasta is tender.
- Heat peas according to package directions. Season with salt and pepper, if desired.
