Skillet Meat Loaf Patties

Ingredients

  • 2 lb ground beef
  • 1 (6-oz) can tomato paste, divided
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 4 Tbsp Dijon mustard, divided
  • 3 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

Instructions

  1. Stir together beef, 3 Tbsp tomato paste, eggs, breadcrumbs, 2 Tbsp mustard, and Worcestershire. Season with salt and pepper, if desired. Shape into 6 patties.
  2. Stir together sugar, remaining tomato paste, and 2 Tbsp mustard in a small bowl.
  3. Cook patties in a large skillet over medium heat 5 minutes. Flip patties, and brush with sugar mixture. Cook 5 minutes or until centers are no longer pink.

Side Dish Ingredients

  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup milk
  • ½ (16-oz) pkg elbows macaroni
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 (10-oz) pkg frozen green peas

Side Dish Instructions

  1. Preheat oven to 400°F. Melt butter in an oven-safe skillet over medium heat. Add flour and cook, whisking constantly 2 minutes.
  2. Gradually whisk in broth and milk. Cook 10 minutes, whisking occasionally, until slightly thickened. Stir in uncooked pasta and cheeses; cover tightly with foil.
  3. Bake 25 minutes; uncover and stir well. Bake 15 to 20 minutes longer or until mixture is thickened and pasta is tender.
  4. Heat peas according to package directions. Season with salt and pepper, if desired.
