Taco Chicken Sandwiches
Smoky Waffle FriesIngredients
- 2 lb boneless, skinless chicken breasts
- 2 cups low-sodium chicken broth
- 1 (10-oz) can enchilada sauce
- 1 tsp onion powder
- 1 tsp ground cumin
- 6 hamburger buns, split and toasted
- ½ cup mayonnaise
- 1 (8-oz) pkg sliced colby-Jack cheese
Instructions
- Combine chicken, broth, enchilada sauce, onion powder, and cumin in a 5- to 7-quart slow cooker; cover, and cook on LOW 6 hours.
- Remove chicken from cooker, reserving cooking liquid. Shred meat, and toss with enough cooking liquid to moisten.
- Spread cut sides of buns with mayonnaise; layer chicken and cheese over bottom halves of buns. Cover with top halves of rolls. Serve with cooking liquid for dipping.

- 1 (24-oz) pkg frozen waffle-cut French fries
- 1 Tbsp olive oil
- 1 Tbsp chili powder
Side Dish Instructions
- Toss fries with oil and chili powder. Bake according to package directions.
