Pork Chops with Pineapple-Cucumber Salsa

Ingredients

  • 6 bone-in pork chops (or use boneless chicken breasts)
  • 1 tsp salt, divided
  • ½ tsp pepper
  • 2 cups finely chopped pineapple
  • 1 cucumber, finely chopped
  • 1 jalapeño pepper, minced
  • ¼ red onion, chopped
  • 1 Tbsp lime juice
  • 1 Tbsp extra virgin olive oil

Instructions

  1. Preheat grill to medium-high heat.
  2. Sprinkle pork chops with ¾ tsp salt and pepper. Grill, covered, 4 to 5 minutes per side or until done.
  3. Meanwhile, combine pineapple, cucumber, jalapeño, onion, lime juice, oil, and ¼ tsp salt; serve over pork chops.

  • 2 lb broccoli
  • 2 Tbsp coconut oil (or use avocado oil)
  • 3 cloves garlic, minced
  • ½ tsp crushed red pepper
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup organic chicken broth

Side Dish Instructions

  1. Cut broccoli into florets and stems into bite-size pieces.
  2. Heat oil in a large saucepan over medium heat. Add garlic and crushed red pepper; cook 1 minute or until garlic is tender. Add broccoli, salt, and pepper, stirring to coat well.
  3. Add broth; cover and steam 6 minutes or until broccoli is tender.
