Pork Chops with Pineapple-Cucumber Salsa
Sautéed Garlic Broccoli
Ingredients
- 6 bone-in pork chops (or use boneless chicken breasts)
- 1 tsp salt, divided
- ½ tsp pepper
- 2 cups finely chopped pineapple
- 1 cucumber, finely chopped
- 1 jalapeño pepper, minced
- ¼ red onion, chopped
- 1 Tbsp lime juice
- 1 Tbsp extra virgin olive oil
Instructions
- Preheat grill to medium-high heat.
- Sprinkle pork chops with ¾ tsp salt and pepper. Grill, covered, 4 to 5 minutes per side or until done.
- Meanwhile, combine pineapple, cucumber, jalapeño, onion, lime juice, oil, and ¼ tsp salt; serve over pork chops.

- 2 lb broccoli
- 2 Tbsp coconut oil (or use avocado oil)
- 3 cloves garlic, minced
- ½ tsp crushed red pepper
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup organic chicken broth
Side Dish Instructions
- Cut broccoli into florets and stems into bite-size pieces.
- Heat oil in a large saucepan over medium heat. Add garlic and crushed red pepper; cook 1 minute or until garlic is tender. Add broccoli, salt, and pepper, stirring to coat well.
- Add broth; cover and steam 6 minutes or until broccoli is tender.
