Italian Chicken Sausage with Apples and Onion

Ingredients

  • 2 Tbsp coconut oil, divided
  • 1 (12- to 14-oz) pkg Italian chicken sausage links, cut into ½-inch-thick slices
  • 2 Gala apples, chopped
  • 2 onions, chopped
  • 1 green bell pepper, chopped
  • 1 Tbsp Italian seasoning
  • 1 tsp salt

Instructions

  1. Melt 1 Tbsp oil in a large nonstick skillet over medium-high heat; add sausage, and cook 5 to 6 minutes or until browned. Remove from skillet, reserving drippings in skillet.
  2. Melt 1 Tbsp oil in hot drippings. Add apples, onions, bell pepper, seasoning, and salt. Reduce heat to medium; cook, stirring occasionally, 15 minutes or until onion is very tender.
  3. Return sausage to skillet; cook 2 to 3 minutes or until thoroughly heated.

  • 1 Tbsp coconut oil
  • 2 cloves garlic, minced
  • 1 (11-oz) pkg baby spinach
  • 2 Tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Melt oil in a large nonstick skillet over medium-high heat; add garlic, and cook 1 minute or until fragrant.
  2. Add spinach, vinegar, salt, and pepper; cook 3 to 5 minutes or until spinach is wilted and liquid almost evaporates.
