Onion-Smothered Pork Chops
Buttered Peas and Mashed Potatoes

Ingredients
- 2 Tbsp butter
- 2 onions, thinly sliced
- 6 (1-inch-thick) boneless pork chops
- 2 Tbsp olive oil
- 1 (10.5-oz) can French onion soup
- ½ tsp dried thyme
Instructions
- Melt butter in a large cast-iron skillet over medium heat; add onion, and cook, stirring often, 10 minutes or until very tender. Remove from skillet.
- Season pork with salt and pepper, if desired. Cook in hot oil in skillet over medium-high heat 3 minutes per side or until browned. Add soup, thyme, and onions to skillet. Cook until pork is done.
Side Dish Ingredients
- 2 (12-oz) pkg frozen green peas
- 3 Tbsp butter
- 1 (32-oz) carton refrigerated mashed potatoes
Side Dish Instructions
- Steam peas according to package directions; toss with butter. Season with salt and pepper, if desired.
- Heat potatoes according to package directions in microwave.
