Ingredients

  • 2 Tbsp butter
  • 2 onions, thinly sliced
  • 6 (1-inch-thick) boneless pork chops
  • 2 Tbsp olive oil
  • 1 (10.5-oz) can French onion soup
  • ½ tsp dried thyme

Instructions

  1. Melt butter in a large cast-iron skillet over medium heat; add onion, and cook, stirring often, 10 minutes or until very tender. Remove from skillet.
  2. Season pork with salt and pepper, if desired. Cook in hot oil in skillet over medium-high heat 3 minutes per side or until browned. Add soup, thyme, and onions to skillet. Cook until pork is done.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen green peas
  • 3 Tbsp butter
  • 1 (32-oz) carton refrigerated mashed potatoes

Side Dish Instructions

  1. Steam peas according to package directions; toss with butter. Season with salt and pepper, if desired.
  2. Heat potatoes according to package directions in microwave.
