Ingredients

  • 8 slices bacon, chopped
  • 1 lb ground beef
  • ½ cup chopped onion
  • 1 Tbsp salt-free Montreal steak seasoning
  • 4 bell peppers (any color), sliced or quartered
  • 1 (8-oz) block Cheddar cheese, shredded
  • ¼ cup chopped dill pickle chips
  • ½ cup mayonnaise
  • 1 Tbsp lemon juice
  • ½ (16-oz) pkg tricolor coleslaw

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain and wipe skillet clean.
  2. Cook beef and onion in same skillet over medium heat until beef is browned and crumbly; drain and sprinkle with steak seasoning.
  3. Preheat oven to 400°F. Arrange peppers, cut sides up, on a greased foil-lined baking sheet; top with beef mixture, bacon, and cheese. Bake 5 minutes or until cheese is melted.
  4. Top nachos with pickles. Stir together mayonnaise and lemon juice in a bowl. Stir in slaw. Spoon over nachos.
