German Apple Pancake
Brown Sugar-Yogurt Topping
Ingredients
- ¾ cup 1% low-fat milk
- 3 large eggs
- 3 Tbsp brown sugar, divided
- 1 tsp vanilla extract
- ¾ tsp ground cinnamon
- ⅛ tsp kosher salt
- ¾ cup whole wheat flour
- 2 Tbsp butter
- 2 small Gala apples, cut into thick slices
- Maple syrup (optional)
Instructions
- Preheat oven to 425°F. Whisk together milk, eggs, 1 Tbsp brown sugar, vanilla, cinnamon, and salt in a medium bowl. Whisk in flour until blended and slightly lumpy.
- Melt butter in a large ovenproof skillet over medium heat; stir in 2 Tbsp sugar. Add apples to skillet; cook 3 to 5 minutes or until lightly browned and tender.
- Pour batter on apples in hot skillet. Transfer skillet to oven; bake 15 to 20 minutes or until pancake is puffed and lightly browned.
- Serve with Brown Sugar-Yogurt Whipped Topping recipe and, if desired, maple syrup.

- ¼ cup 2% reduced-fat vanilla Greek yogurt
- 2 Tbsp heavy whipping cream
- 1 Tbsp brown sugar
- ½ tsp vanilla extract
Side Dish Instructions
- Whisk together all ingredients in a bowl. Spoon over pancake.
