Parmesan Chicken Spaghetti

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 onion, chopped
  • ½ cup low-sodium chicken broth
  • ¾ cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp crushed red pepper
  • 12 oz spaghetti

Instructions

  1. Arrange chicken in a 5- to 7-quart slow cooker. Top with tomatoes, onion, and broth.
  2. Sprinkle cheese, Italian seasoning, salt, pepper, and red pepper over broth. Cover and cook on LOW 6 hours.
  3. Cook pasta according to package directions. Serve chicken mixture over pasta.

  • 1 head romaine lettuce, chopped
  • ½ cup grated Parmesan cheese
  • ½ cup creamy Caesar dressing
