Mozzarella and Avocado Panini

Ingredients

  • ½ (1-lb) loaf ciabatta bread (see Note) 
  • 1 Tbsp olive oil
  • ½ (6.25-oz) jar creamy Genovese pesto
  • ½ (8-oz) ball fresh mozzarella cheese, sliced
  • ¼ tsp freshly ground pepper
  • 1 large tomato (See Note), sliced
  • 1 avocado, sliced
  • 1½ cups baby arugula

Instructions

  1. Cut ciabatta into 3 rectangles; cut each rectangle in half lengthwise. Brush outsides of each ciabatta piece with oil.
  2. Spread pesto on cut sides of ciabatta. Assemble sandwiches with cheese, pepper, tomatoes, avocados, and arugula.
  3. Cook sandwiches in a large grill pan (or panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

Side Dish Ingredients

  • 1 pint grape tomatoes (See Note), halved
  • ½ bell pepper (any color), chopped
  • ½ English cucumber, cut into half-moons
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together ingredients in a bowl.
