Ingredients

  • ½ (25-oz) pkg frozen cheese ravioli
  • 1 Tbsp butter
  • ½ (8-oz) pkg chopped onion
  • 1 clove garlic, minced
  • 1 (6-oz) pkg baby spinach
  • 2 oz cream cheese, softened and cubed
  • ½ cup heavy cream
  • ½ (8.5-oz) jar thinly sliced sun-dried tomatoes in oil, drained (reserve oil for another use)

Instructions

  1. Cook ravioli according to package directions; drain well.
  2. Meanwhile, melt butter in a large skillet over medium heat. Add onion and garlic; cook, stirring occasionally, 3 minutes. Add spinach, cream cheese, and cream. Cook, stirring often, until spinach wilts and cheese is melted.
  3. Stir in tomatoes and pasta. Cook 2 minutes or until thoroughly heated.
