Cheesy Pork and Potato Casserole

Ingredients

  • ½ lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • 1½ cups frozen O'Brien potatoes, thawed
  • ½ cup canned cream of mushroom soup
  • ⅔ cup shredded Cheddar cheese
  • ⅓ cup sour cream

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with salt and pepper. Cook pork in hot oil in a skillet over medium-high heat until browned. Remove from skillet.
  2. Meanwhile, stir together potatoes, soup, cheese, and sour cream in a bowl. Spoon mixture into a lightly greased small baking dish.
  3. Nestle pork in potato mixture. Cover and bake 30 to 35 minutes or until pork is tender and potatoes are hot and bubbly.

  • ½ lb green beans, trimmed
  • 1 Tbsp canola oil (or use vegetable oil)
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are tender and browned.
