Cheesy Pork and Potato Casserole
Roasted Green BeansIngredients
- ½ lb boneless pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- 1½ cups frozen O'Brien potatoes, thawed
- ½ cup canned cream of mushroom soup
- ⅔ cup shredded Cheddar cheese
- ⅓ cup sour cream
Instructions
- Preheat oven to 400°F. Sprinkle pork with salt and pepper. Cook pork in hot oil in a skillet over medium-high heat until browned. Remove from skillet.
- Meanwhile, stir together potatoes, soup, cheese, and sour cream in a bowl. Spoon mixture into a lightly greased small baking dish.
- Nestle pork in potato mixture. Cover and bake 30 to 35 minutes or until pork is tender and potatoes are hot and bubbly.

- ½ lb green beans, trimmed
- 1 Tbsp canola oil (or use vegetable oil)
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are tender and browned.
