Mediterranean Beef Stir-Fry

Ingredients
- ½ lb ground sirloin
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil, divided
- ½ red or yellow bell pepper, chopped
- ⅔ cup halved grape tomatoes
- ⅓ cup chopped kalamata olives (optional)
- 1 Tbsp minced garlic
- 2 cups baby spinach
- ¼ cup olive oil vinaigrette
- ⅓ cup crumbled feta cheese
Instructions
- Sprinkle beef with salt and pepper; cook beef in 2 tsp hot oil in a skillet over medium heat 8 minutes or until crumbly.
- Meanwhile, cook bell pepper, tomatoes, and, if desired, olives in 1 tsp hot oil in a large saucepan over medium-high heat 8 minutes or until browned and tender. Add garlic; cook 1 minute or until fragrant.
- Stir in beef, spinach, and vinaigrette; cook until spinach wilts, tossing to coat. Sprinkle with cheese. Serve over rice.
