Sausage Cabbage Rolls
Warm Couscous and Tomato Salad
Ingredients
- 12 large cabbage leaves
- 1½ lb ground mild Italian chicken sausage
- 1 onion, chopped
- 1 green bell pepper, chopped
- ½ tsp black pepper
- 1 (14.5-oz) can fire-roasted crushed tomatoes
- 1 cup low-sodium chicken broth
- 2 tsp Worcestershire sauce
- 2 tsp dried basil
- 2 cloves garlic, minced
Instructions
- Cook cabbage in boiling water to cover in a large saucepan over medium-high heat 5 minutes or until tender. Drain and rinse under cold water.
- Combine sausage, onion, bell pepper, and black pepper. Divide sausage mixture among cabbage leaves; roll up leaves. Arrange in a 5- to 6-quart slow cooker.
- Stir together tomatoes, broth, Worcestershire sauce, basil, and garlic. Pour tomato mixture over cabbage rolls.
- Cover and cook on LOW 7 to 8 hours or until sausage is fully cooked and no longer pink.

- 1 (10-oz) pkg plain couscous
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp pepper
- 3 Roma tomatoes, chopped
- ½ cup chopped fresh parsley
- 2 green onions, sliced
Side Dish Instructions
- Prepare couscous according to package directions.
- Whisk together oil, vinegar, salt, and pepper in a large bowl. Add couscous, tomatoes, parsley, and green onions; toss.
