Sausage Cabbage Rolls

Ingredients

  • 12 large cabbage leaves
  • 1½ lb ground mild Italian chicken sausage
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • ½ tsp black pepper
  • 1 (14.5-oz) can fire-roasted crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 2 tsp Worcestershire sauce
  • 2 tsp dried basil
  • 2 cloves garlic, minced

Instructions

  1. Cook cabbage in boiling water to cover in a large saucepan over medium-high heat 5 minutes or until tender. Drain and rinse under cold water.
  2. Combine sausage, onion, bell pepper, and black pepper. Divide sausage mixture among cabbage leaves; roll up leaves. Arrange in a 5- to 6-quart slow cooker.
  3. Stir together tomatoes, broth, Worcestershire sauce, basil, and garlic. Pour tomato mixture over cabbage rolls.
  4. Cover and cook on LOW 7 to 8 hours or until sausage is fully cooked and no longer pink.

  • 1 (10-oz) pkg plain couscous
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Roma tomatoes, chopped
  • ½ cup chopped fresh parsley
  • 2 green onions, sliced

Side Dish Instructions

  1. Prepare couscous according to package directions.
  2. Whisk together oil, vinegar, salt, and pepper in a large bowl. Add couscous, tomatoes, parsley, and green onions; toss.
