Kendall-Jackson Vintner's Reserve Sauvignon Blanc

Ingredients

  • 12 oz spaghetti, broken into thirds
  • 2 (2.52-oz) pkg fully cooked bacon
  • 1 (8-oz) block cream cheese, cut into small pieces
  • ¾ cup chicken broth
  • 1 (5-oz) pkg baby spinach
  • 3 large tomatoes, chopped

Instructions

  1. Cook pasta according to package directions. Drain and cover to keep warm in pot.
  2. Meanwhile, heat bacon, in batches if needed, in a large skillet over medium heat 3 to 4 minutes or just until crisp, turning once. Drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  3. Add cream cheese and broth to skillet; cook over medium heat 3 minutes or until saucy and thickened, stirring often. Add to pasta in pot, stirring to coat. Stir in spinach and tomatoes. Season with salt and pepper, if desired.
  4. Stir in half of bacon; sprinkle with remaining bacon. Serve warm or at room temperature.
