Italian Turkey Sausage and Cauliflower Skillet
Whole-Grain Bread with Balsamic Dipping Oil
Ingredients
- 1½ lb ground Italian turkey sausage
- 1 small onion, diced
- 2 Tbsp olive oil
- 2 (12-oz) pkg cauliflower florets, coarsely chopped
- 1 cup low-sodium chicken broth
- 2 (5-oz) pkg baby kale
- ½ cup freshly shredded Parmesan cheese
- ¼ tsp pepper
Instructions
- Cook sausage and onion in a large nonstick skillet over medium heat 5 to 7 minutes or until sausage is browned and crumbly. Drain sausage, reserving 2 Tbsp drippings in skillet.
- Add cauliflower to drippings in skillet; sauté 2 minutes or until edges are browned.
- Add broth and kale to skillet; cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
- Uncover and cook over high heat until liquid is almost evaporated. Sprinkle with cheese and pepper; toss.

- 6 Tbsp olive oil
- 3 Tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp freshly ground pepper
- ½ (13-oz) loaf whole wheat French bread, heated
Side Dish Instructions
- Combine oil, vinegar, garlic, Italian seasoning, and pepper in a small bowl; serve with bread for dipping.
