Italian Turkey Sausage and Cauliflower Skillet

Ingredients

  • 1½ lb ground Italian turkey sausage
  • 1 small onion, diced
  • 2 Tbsp olive oil
  • 2 (12-oz) pkg cauliflower florets, coarsely chopped
  • 1 cup low-sodium chicken broth
  • 2 (5-oz) pkg baby kale 
  • ½ cup freshly shredded Parmesan cheese
  • ¼ tsp pepper

Instructions

  1. Cook sausage and onion in a large nonstick skillet over medium heat 5 to 7 minutes or until sausage is browned and crumbly. Drain sausage, reserving 2 Tbsp drippings in skillet.
  2. Add cauliflower to drippings in skillet; sauté 2 minutes or until edges are browned.
  3. Add broth and kale to skillet; cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
  4. Uncover and cook over high heat until liquid is almost evaporated. Sprinkle with cheese and pepper; toss.

  • 6 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp freshly ground pepper
  • ½ (13-oz) loaf whole wheat French bread, heated

Side Dish Instructions

  1. Combine oil, vinegar, garlic, Italian seasoning, and pepper in a small bowl; serve with bread for dipping.
