Ingredients

  • ½ lb flank steak, trimmed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ½ lemon
  • 2 Tbsp butter, softened
  • ½ tsp garlic paste
  • 1½ Tbsp chopped fresh chives or parsley

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes before thinly slicing across the grain.
  2. Grate ½ tsp zest from lemon half. Stir together lemon zest, butter, garlic paste, and chives. Serve butter with steak.

  • ½ lb small red potatoes, halved
  • 2 cups spinach
  • ¼ cup sour cream
  • 1½ Tbsp butter, cut into pieces
  • 1 Tbsp garlic paste
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
  2. Toss potatoes with spinach in same pan. Add sour cream, butter, garlic paste, pepper, and salt. Mash with a potato masher to desired consistency.
