Garlic-Herb Butter Flank Steak
Garlic-Spinach Mashed Potatoes

Ingredients
- ½ lb flank steak, trimmed
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- ½ lemon
- 2 Tbsp butter, softened
- ½ tsp garlic paste
- 1½ Tbsp chopped fresh chives or parsley
Instructions
- Sprinkle steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes before thinly slicing across the grain.
- Grate ½ tsp zest from lemon half. Stir together lemon zest, butter, garlic paste, and chives. Serve butter with steak.

- ½ lb small red potatoes, halved
- 2 cups spinach
- ¼ cup sour cream
- 1½ Tbsp butter, cut into pieces
- 1 Tbsp garlic paste
- ¼ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
- Toss potatoes with spinach in same pan. Add sour cream, butter, garlic paste, pepper, and salt. Mash with a potato masher to desired consistency.
