Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (16-oz) container pineapple chunks
  • 2 Tbsp olive oil
  • 1 (12-oz) pkg frozen shelled edamame
  • 2 avocados, sliced or chopped
  • 1 English cucumber, sliced or chopped
  • 1½ cups French fried onions
  • ¾ cup yum yum sauce

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook pineapple in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Remove from skillet.
  3. Add edamame to skillet; cook 3 to 4 minutes or until thoroughly heated.
  4. Divide rice, pineapple, edamame, avocados, cucumber, and fried onions among 6 bowls. Drizzle with yum yum sauce.
