Honey Roasted Feta and Cauliflower Pasta

Ingredients

  • ½ head cauliflower, cut into florets
  • 3 cloves garlic, thinly sliced
  • 2 Tbsp olive oil, divided
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ½ (8-oz) block feta cheese
  • ½ (12-oz) pkg bucatini pasta
  • 1½ tsp honey
  • ¼ tsp crushed red pepper
  • 1½ cups baby arugula

Instructions

  1. Preheat oven to 425°F. Toss together cauliflower, garlic, 1 Tbsp oil, salt, and black pepper in a 1-quart baking dish. Nestle cheese in center of dish; drizzle 1 Tbsp oil on cheese.
  2. Bake 30 to 35 minutes or until cheese is softened and cauliflower is browned and tender.
  3. Meanwhile, cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  4. Add ¼ cup reserved pasta water, honey, and red pepper to roasted cauliflower-cheese mixture. Mash baked cheese, and stir into cauliflower until creamy and combined.
  5. Add hot cooked pasta; toss. Top with arugula.
