Sheet Pan Roasted Fish with Broccoli and Tomatoes

Ingredients

  • 6 (6-oz) cod fillets
  • 4 Tbsp olive oil, divided
  • 2 tsp Italian seasoning
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • 1 pint grape tomatoes, halved
  • 1 (12-oz) pkg broccoli florets
  • 3 cloves garlic, minced
  • 2 tsp lemon zest
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp chopped fresh basil
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil; sprinkle with Italian seasoning, ¼ tsp salt, and pepper.
  2. Toss together tomatoes, broccoli, 3 Tbsp oil, garlic, and ¼ tsp salt in a large bowl. Arrange tomato mixture around fish.
  3. Bake 15 to 20 minutes or until fish flakes with a fork.
  4. Meanwhile, stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.

Side Dish Ingredients

  • 2 Tbsp white wine vinegar
  • 1½ Tbsp olive oil
  • ¼ tsp salt 
  • ¼ tsp pepper
  • 2 (5-oz) pkg spring mix

Side Dish Instructions

  1. Whisk together first 4 ingredients a large bowl. Add lettuce; toss.
