Sheet Pan Roasted Fish with Broccoli and Tomatoes
Spring Mix SaladIngredients
- 6 (6-oz) cod fillets
- 4 Tbsp olive oil, divided
- 2 tsp Italian seasoning
- ½ tsp salt, divided
- ¼ tsp pepper
- 1 pint grape tomatoes, halved
- 1 (12-oz) pkg broccoli florets
- 3 cloves garlic, minced
- 2 tsp lemon zest
- 3 Tbsp fresh lemon juice
- 3 Tbsp chopped fresh basil
- 1 Tbsp honey
Instructions
- Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil; sprinkle with Italian seasoning, ¼ tsp salt, and pepper.
- Toss together tomatoes, broccoli, 3 Tbsp oil, garlic, and ¼ tsp salt in a large bowl. Arrange tomato mixture around fish.
- Bake 15 to 20 minutes or until fish flakes with a fork.
- Meanwhile, stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.

- 1½ Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 2 (5-oz) pkg spring mix
Side Dish Instructions
- Whisk together first 4 ingredients a large bowl. Add lettuce; toss.
