Lemon-Pepper Pork Medallions
Mashed Potatoes and Green BeansIngredients
- 1 (1-lb) pork tenderloin, trimmed
- 3 Tbsp all-purpose flour
- 1½ tsp lemon-pepper seasoning
- 3 Tbsp butter, divided
- 1½ Tbsp honey
Instructions
- Cut pork into 1-inch-thick slices. Pound slices to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Stir together flour and seasoning in a shallow bowl; dredge pork in mixture.
- Melt 1½ Tbsp butter in a large nonstick skillet over medium heat. Add pork and cook 2 to 3 minutes per side or until done.
- Melt 1½ Tbsp butter in microwave in a small microwave-safe bowl; whisk in honey. Pour over pork.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 1 (12-oz) pkg frozen green beans
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Heat mashed potatoes according to package directions. Cook beans according to package directions. Toss beans with salt and pepper.
