Lemon-Pepper Pork Medallions

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • 3 Tbsp all-purpose flour
  • 1½ tsp lemon-pepper seasoning
  • 3 Tbsp butter, divided
  • 1½ Tbsp honey

Instructions

  1. Cut pork into 1-inch-thick slices. Pound slices to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together flour and seasoning in a shallow bowl; dredge pork in mixture.
  3. Melt 1½ Tbsp butter in a large nonstick skillet over medium heat. Add pork and cook 2 to 3 minutes per side or until done.
  4. Melt 1½ Tbsp butter in microwave in a small microwave-safe bowl; whisk in honey. Pour over pork.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 (12-oz) pkg frozen green beans
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Heat mashed potatoes according to package directions. Cook beans according to package directions. Toss beans with salt and pepper.
