Herb Pork Chops and Vegetables
Mashed Potatoes
Ingredients
- 1 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
- ¾ lb boneless pork chops
- 1 Tbsp olive oil
- ⅓ cup heavy cream
- ⅓ cup low-sodium chicken broth
- ½ tsp Italian seasoning
- ½ tsp garlic powder
Instructions
- Cook vegetables according to package directions.
- Sprinkle pork with salt and pepper, if desired. Cook in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned.
- Reduce heat to medium. Add cream, broth, seasoning, and garlic powder; cook 3 minutes or until sauce is thickened and pork is done. Stir in vegetables.
