Messy Meatball Subs
Creamy Mustard Slaw and French FriesIngredients
- ½ lb ground beef
- ¼ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese, divided
- 1 egg yolk, lightly beaten
- 1 tsp Italian seasoning
- 1 cup marinara sauce
- ½ cup shredded mozzarella cheese
- 2 sub rolls, split and toasted
Instructions
- Preheat oven to 400°F. Stir together beef, breadcrumbs, 2 Tbsp Parmesan, egg yolk, and seasoning. Shape mixture into 8 meatballs.
- Place meatballs on a wire rack on a rimmed baking sheet; bake 20 minutes.
- Combine meatballs and pasta sauce in a large skillet; cook over medium heat until sauce is thoroughly heated.
- Sprinkle mozzarella over sub rolls; top with meatballs and sauce. Sprinkle with remaining Parmesan.

- 2 Tbsp mayonnaise
- 1 Tbsp mustard
- 1 Tbsp apple cider vinegar
- 1 tsp sugar
- ½ (16-oz) pkg tricolor coleslaw
- ½ (32-oz) pkg frozen French fries
Side Dish Instructions
- Whisk together mayonnaise, mustard, vinegar, and sugar in a large bowl. Stir in coleslaw.
- Bake fries according to package directions.
