Alphabet Chicken Noodle Soup

Biscuits and Apple Butter

Ingredients

  • 3 Tbsp butter
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1 lb boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 1 Tbsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1½ cups alphabet-shaped pasta

Instructions

  1. Melt butter in a large Dutch oven over medium heat. Add carrots and celery; cook 5 minutes or until tender.
  2. Add chicken, broth, seasoning, onion powder, salt, and pepper; bring to a boil, cover, reduce heat, and simmer 25 minutes or until chicken is done. Remove chicken from broth, and shred with 2 forks.
  3. Add pasta to broth with shredded chicken; cook 8 to 10 minutes or until pasta is done.

Side Dish Ingredients

  • 1 (6-count) pkg frozen buttermilk biscuits
  • 1 (16.5-oz) jar apple butter

Side Dish Instructions

  1. Bake biscuits according to package directions. Serve with apple butter.
