Creamy Alfredo Sausage Tortellini

Ingredients

  • 1 (19-oz) pkg frozen cheese tortellini
  • 1 (16-oz) pkg ground mild Italian sausage
  • 1 (28-oz) can crushed tomatoes
  • 1 (16-oz) jar Alfredo sauce
  • ½ cup low-sodium chicken broth
  • 2 tsp dried basil
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook tortellini according to package directions; drain.
  2. Meanwhile, cook sausage in a large deep skillet over medium heat until browned and crumbly; drain, if needed and return to skillet.
  3. Add tomatoes, Alfredo sauce, broth, and basil; cook over medium-low heat 10 minutes or until thoroughly heated. Add tortellini; toss, and sprinkle with Parmesan.

  • 1 head broccoli, cut into florets
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 2 tsp brown sugar
  • 1 tsp garlic powder

Side Dish Instructions

  1. Preheat oven to 400°F. Place broccoli florets on a large rimmed baking sheet.
  2. Whisk together oil, vinegar, brown sugar, and garlic powder; drizzle over broccoli. Season with salt and pepper, if desired.
  3. Bake 20 to 25 minutes or until broccoli is browned and tender.
