Grilled Chicken Dijon

Smoky Sweet Potato Wedges and Roasted Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ⅓ cup Dijon mustard
  • 3 Tbsp lemon juice
  • 1½ tsp dried tarragon

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together mustard, lemon juice, and tarragon in a bowl; brush over chicken.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done.

Side Dish Ingredients

  • 2 large sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 4 Tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1 tsp garlic salt
  • 1 head broccoli, cut into florets

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together potatoes and 2 Tbsp oil on a large rimmed baking sheet. Sprinkle with paprika and garlic salt. Bake 10 minutes.
  2. Meanwhile, toss together broccoli and 2 Tbsp oil on a second large rimmed baking sheet; season lightly with salt and pepper, if desired. Add to oven with potatoes, and bake 20 minutes or until potatoes and broccoli are browned and tender.
