Grilled Chicken Dijon
Smoky Sweet Potato Wedges and Roasted Broccoli
Ingredients
- 2 lb boneless, skinless chicken breasts
- ⅓ cup Dijon mustard
- 3 Tbsp lemon juice
- 1½ tsp dried tarragon
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Stir together mustard, lemon juice, and tarragon in a bowl; brush over chicken.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
Side Dish Ingredients
- 2 large sweet potatoes, peeled and cut into ½-inch-thick wedges
- 4 Tbsp olive oil, divided
- 1 tsp smoked paprika
- 1 tsp garlic salt
- 1 head broccoli, cut into florets
Side Dish Instructions
- Preheat oven to 400°F. Toss together potatoes and 2 Tbsp oil on a large rimmed baking sheet. Sprinkle with paprika and garlic salt. Bake 10 minutes.
- Meanwhile, toss together broccoli and 2 Tbsp oil on a second large rimmed baking sheet; season lightly with salt and pepper, if desired. Add to oven with potatoes, and bake 20 minutes or until potatoes and broccoli are browned and tender.
