Grilled Chicken with White Barbecue Sauce
Grilled Lemony Sweet PotatoesIngredients
- 2½ lb bone-in, skin-on chicken breasts
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ⅓ cup mayonnaise
- 2 Tbsp white vinegar
- 1 Tbsp lemon juice
- ¼ tsp cayenne pepper
Instructions
- Preheat grill to medium-high heat. Remove skin from chicken. Rub chicken with paprika, salt, and black pepper.
- Grill chicken, covered, 7 to 8 minutes per side or until chicken is done. Cool slightly, and cut chicken into serving-size pieces.
- Meanwhile, combine mayonnaise, vinegar, lemon juice, and cayenne pepper; serve with chicken.
Side Dish Ingredients
- 1½ lb large sweet potatoes, ends trimmed
- 2 Tbsp olive oil
- 1 tsp garlic salt
- ½ tsp lemon zest
- ½ tsp pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Microwave potatoes at HIGH 6 to 8 minutes or until crisp-tender. Transfer to a cutting board, and let stand until cool enough to handle, about 15 minutes.
- Cut potatoes lengthwise into 16 wedges. Transfer to a rimmed baking sheet. Toss with oil, garlic salt, lemon zest, and pepper.
- Grill, covered, 3 minutes per side or until potatoes are charred and tender.
