Ingredients
- ½ Tbsp olive oil
- ¾ lb boneless, skinless chicken breasts
- ½ (12-oz) pkg broccoli florets
- ½ (10-oz) pkg frozen whole-grain brown rice
- ¾ cup chopped onion
- 1 cup low-sodium chicken broth
- ¾ cup shredded white Cheddar cheese, divided (or use other Cheddar)
- ¼ cup sour cream
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 400°F. .
- Meanwhile, drizzle oil over chicken in a lightly greased baking dish. Bake 25 minutes or until done. Cool, shred chicken, and set aside.
- Meanwhile, cook broccoli and rice according to package directions.
- Stir together chicken, broccoli, rice, onion, broth, ½ cup cheese, sour cream, salt, and pepper in a medium bowl. Spoon into a 9-inch baking dish coated with cooking spray; sprinkle with ¼ cup cheese.
- Bake 20 minutes or until bubbly.

- ½ cup halved strawberries
