Korean Beef Stir Fry

Ingredients

  • 1 lb lean ground beef 
  • 2 small cloves garlic, minced
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp honey
  • 2 tsp low-sodium soy sauce
  • ¼ tsp ground ginger
  • ¼ tsp crushed red pepper
  • ½ English cucumber, thinly sliced
  • 1 carrot, shredded
  • 2 green onions, chopped
  • Sesame seeds (optional)

Instructions

  1. Cook beef and garlic in a large nonstick skillet 8 minutes or until browned and crumbly.
  2. Combine vinegar, honey, soy sauce, ginger, and pepper; add to skillet. Cook 2 minutes or until thoroughly heated.
  3. Serve beef mixture over Sesame Broccoli Rice recipe; top with cucumber, carrots, and green onions; sprinkle with sesame seeds, if desired.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced broccoli
  • ½ Tbsp dark sesame oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1.  Cook broccoli according to package directions; toss with oil, salt, and pepper.
