Black Bean Fiesta Tostadas

Ingredients

  • 12 tostada shells
  • 2 (15-oz) cans low-sodium black beans, drained and rinsed
  • ¾ tsp ground cumin
  • 1 (8-oz) container guacamole
  • 3 Roma tomatoes, chopped
  • 1 cup diced red onion
  • 1 yellow bell pepper, diced
  • 1 romaine lettuce heart, sliced
  • ¾ cup vegan sour cream

Instructions

  1. Heat tostada shells and beans separately according to package directions. Stir cumin into beans. Season with salt and pepper, if desired.
  2. Spread guacamole on tostadas. Top with beans, tomatoes, onion, bell pepper, lettuce, and sour cream.
