Banana French Toast Bake
Ingredients
- 12 slices organic whole wheat sandwich bread, cut into 1-inch cubes
- 1 (8-oz) block cream cheese, cut into ½-inch cubes
- 4 bananas, sliced and divided
- 6 large eggs, lightly beaten
- 4 cups milk
- ¼ cup organic granulated sugar
- ¼ cup pure maple syrup, divided
- ¾ tsp ground cinnamon, divided
Instructions
- Place half of bread cubes in a 13- x 9-inch baking dish coated with cooking spray. Top with cream cheese, 3 sliced bananas, and remaining bread cubes.
- Whisk together eggs, milk, sugar, 3 Tbsp syrup, and ½ tsp cinnamon in a large bowl. Pour over bread mixture. Cover and chill at least 8 hours or overnight.
- Let stand at room temperature 30 minutes before baking.
- Preheat oven to 350°F. Uncover and bake 40 to 45 minutes or until center is set. Garnish with 1 sliced banana, 1 Tbsp syrup, and ¼ tsp cinnamon.
