Banana French Toast Bake

Ingredients

  • 12 slices organic whole wheat sandwich bread, cut into 1-inch cubes
  • 1 (8-oz) block cream cheese, cut into ½-inch cubes
  • 4 bananas, sliced and divided
  • 6 large eggs, lightly beaten
  • 4 cups milk
  • ¼ cup organic granulated sugar
  • ¼ cup pure maple syrup, divided
  • ¾ tsp ground cinnamon, divided

Instructions

  1. Place half of bread cubes in a 13- x 9-inch baking dish coated with cooking spray. Top with cream cheese, 3 sliced bananas, and remaining bread cubes.
  2. Whisk together eggs, milk, sugar, 3 Tbsp syrup, and ½ tsp cinnamon in a large bowl. Pour over bread mixture. Cover and chill at least 8 hours or overnight.
  3. Let stand at room temperature 30 minutes before baking.
  4. Preheat oven to 350°F. Uncover and bake 40 to 45 minutes or until center is set. Garnish with 1 sliced banana, 1 Tbsp syrup, and ¼ tsp cinnamon.
