Toasted Greek Burritos

Ingredients

  • 1 cup Israeli (pearl) couscous
  • 2 Tbsp olive oil
  • 1 Tbsp Greek seasoning
  • 1 (10-oz) container hummus
  • 6 burrito-size flour tortillas
  • 1 cup crumbled feta cheese
  • 1 cucumber, chopped
  • 3 Roma tomatoes, chopped
  • ¾ cup kalamata olives
  • 1 cup tzatziki dip (optional)

Instructions

  1. Preheat broiler. Cook couscous according to package directions. Stir in oil and seasoning.
  2. Spread hummus on tortillas. Top with cheese, couscous, cucumber, tomatoes, and olives. Fold in sides of tortillas; roll up to completely enclose filling.
  3. Place burritos in a greased 13- x 9-inch baking dish. Broil 2 to 3 minutes or until toasted. Serve burritos with tzatziki dip, if desired.
