Toasted Greek Burritos

Ingredients
- 1 cup Israeli (pearl) couscous
- 2 Tbsp olive oil
- 1 Tbsp Greek seasoning
- 1 (10-oz) container hummus
- 6 burrito-size flour tortillas
- 1 cup crumbled feta cheese
- 1 cucumber, chopped
- 3 Roma tomatoes, chopped
- ¾ cup kalamata olives
- 1 cup tzatziki dip (optional)
Instructions
- Preheat broiler. Cook couscous according to package directions. Stir in oil and seasoning.
- Spread hummus on tortillas. Top with cheese, couscous, cucumber, tomatoes, and olives. Fold in sides of tortillas; roll up to completely enclose filling.
- Place burritos in a greased 13- x 9-inch baking dish. Broil 2 to 3 minutes or until toasted. Serve burritos with tzatziki dip, if desired.
