Skillet Meat Loaf Patties
No-Boil Mac and Cheese and Steamed Peas
Ingredients
- ¾ lb ground beef
- 3 Tbsp tomato paste, divided
- 1 large egg, lightly beaten
- ⅓ cup panko breadcrumbs
- 2 Tbsp Dijon mustard, divided
- 1 Tbsp Worcestershire sauce
- 1 Tbsp brown sugar
Instructions
- Stir together beef, 1½ Tbsp tomato paste, egg, breadcrumbs, 1 Tbsp mustard, and Worcestershire. Season with salt and pepper, if desired. Shape into 2 patties.
- Stir together sugar, 1½ Tbsp tomato paste, and 1 Tbsp mustard in a small bowl.
- Cook patties in a skillet over medium heat 5 minutes. Flip patties, and brush with sugar mixture. Cook 5 minutes or until centers are no longer pink.
Side Dish Ingredients
- 1 Tbsp butter
- 1 Tbsp all-purpose flour
- 1 cup low-sodium chicken broth
- ½ cup milk
- 4 oz elbows macaroni
- ½ cup shredded Cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ½ (10-oz) pkg frozen green peas
Side Dish Instructions
- Preheat oven to 400°F. Melt butter in a small oven-safe skillet over medium heat. Add flour and cook, whisking constantly 2 minutes.
- Gradually whisk in broth and milk. Cook 10 minutes, whisking occasionally, until slightly thickened. Stir in uncooked pasta and cheeses; cover tightly with foil.
- Bake 20 minutes; uncover and stir well. Bake 10 to 15 minutes longer or until mixture is thickened and pasta is tender.
- Heat peas according to package directions. Season with salt and pepper, if desired.
