One-Pot Broccoli Mac and Cheese

Ingredients
- ½ cup whole wheat panko breadcrumbs
- 1 Tbsp canola oil
- 1 (12-oz) pkg frozen broccoli florets
- 2 cups 2% reduced-fat milk
- 1¾ cups water
- ½ (16-oz) pkg elbow macaroni (preferably whole-grain)
- ½ tsp salt
- ½ tsp pepper
- 1 cup shredded reduced-fat Cheddar cheese
Instructions
- Toast breadcrumbs in hot oil in a large saucepan over medium-high heat or until golden. Remove from saucepan.
- Microwave broccoli according to package directions. Drain, and keep warm.
- Meanwhile, bring milk, water, pasta, salt, and pepper to a simmer in same saucepan over medium heat, stirring occasionally. Reduce heat; cook, stirring frequently, 8 to 10 minutes or until pasta is done and sauce is creamy.
- Remove pot from heat. Stir in cheese and fold in broccoli. Sprinkle with toasted breadcrumbs.
