One-Pot Broccoli Mac and Cheese

Ingredients

  • ½ cup whole wheat panko breadcrumbs
  • 1 Tbsp canola oil
  • 1 (12-oz) pkg frozen broccoli florets
  • 2 cups 2% reduced-fat milk
  • 1¾ cups water
  • ½ (16-oz) pkg elbow macaroni (preferably whole-grain)
  • ½ tsp salt 
  • ½ tsp pepper
  • 1 cup shredded reduced-fat Cheddar cheese

Instructions

  1. Toast breadcrumbs in hot oil in a large saucepan over medium-high heat or until golden. Remove from saucepan.
  2. Microwave broccoli according to package directions. Drain, and keep warm.
  3. Meanwhile, bring milk, water, pasta, salt, and pepper to a simmer in same saucepan over medium heat, stirring occasionally. Reduce heat; cook, stirring frequently, 8 to 10 minutes or until pasta is done and sauce is creamy.
  4. Remove pot from heat. Stir in cheese and fold in broccoli. Sprinkle with toasted breadcrumbs.
