Ingredients

  • 8 frozen whole-grain breaded chicken tenders
  • 1 (5-oz) pkg spring mix
  • 1 large red pear, sliced
  • ¼ cup crumbled gorgonzola cheese (or use blue cheese)
  • ¼ cup chopped pecans
  • ¼ cup sweetened dried cranberries
  • ⅓ cup apple cider vinaigrette (or use balsamic vinaigrette)

Instructions

  1.  Bake chicken tenders according to package directions. Cool and slice chicken.
  2. Divide greens, chicken, pear slices, cheese, nuts, and cranberries among 4 plates or to-go containers. Drizzle with vinaigrette.
