Bean and Cheese Burritos

Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • 1 (15- to 16-oz) can vegan refried beans
  • 1½ tsp Southwest seasoning
  • 2 Tbsp water
  • 6 organic burrito-size flour tortillas
  • 2 cups shredded romaine lettuce
  • 1½ cups vegan shredded Cheddar cheese
  • ¾ cup refrigerated salsa
  • 6 Tbsp vegan sour cream
  • 2 avocados, chopped

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, stir together beans, seasoning, and water in a saucepan. Cook over medium heat, stirring often, 4 to 5 minutes or until thoroughly heated.
  3. Heat tortillas according to package directions.
  4. Spread bean mixture on tortillas; spoon rice onto center of each tortilla. Top each with ⅓ cup lettuce, ¼ cup cheese, 2 Tbsp salsa, and 1 Tbsp sour cream. Fold bottom of each tortilla over filling; fold in sides, and roll up.
  5. Serve burritos with avocado.
