Bean and Cheese Burritos
Ingredients
- 1 (8.8-oz) pouch microwavable brown rice
- 1 (15- to 16-oz) can vegan refried beans
- 1½ tsp Southwest seasoning
- 2 Tbsp water
- 6 organic burrito-size flour tortillas
- 2 cups shredded romaine lettuce
- 1½ cups vegan shredded Cheddar cheese
- ¾ cup refrigerated salsa
- 6 Tbsp vegan sour cream
- 2 avocados, chopped
Instructions
- Cook rice according to package directions.
- Meanwhile, stir together beans, seasoning, and water in a saucepan. Cook over medium heat, stirring often, 4 to 5 minutes or until thoroughly heated.
- Heat tortillas according to package directions.
- Spread bean mixture on tortillas; spoon rice onto center of each tortilla. Top each with ⅓ cup lettuce, ¼ cup cheese, 2 Tbsp salsa, and 1 Tbsp sour cream. Fold bottom of each tortilla over filling; fold in sides, and roll up.
- Serve burritos with avocado.
