Horseradish Burger Lettuce Wraps

Ingredients

  • 6 fresh plant-based burger patties
  • 1 Tbsp olive oil
  • ¼ cup vegan sour cream
  • 2 Tbsp vegan mayonnaise
  • 2 Tbsp prepared horseradish
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • 6 romaine lettuce leaves
  • 1 cup grape tomatoes, halved

Instructions

  1. Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 4 minutes per side.
  2. Meanwhile, stir together sour cream, mayonnaise, horseradish, garlic, and salt.
  3. Serve burgers on lettuce leaves with horseradish sauce and tomatoes.

Side Dish Ingredients

  • 1 red onion, sliced
  • 1 Tbsp olive oil
  • 2 large zucchini, sliced
  • ½ tsp dried oregano
  • ½ tsp salt

Side Dish Instructions

  1. Cook onion in hot oil in a large skillet over medium heat 3 minutes or until translucent but not browned. Add zucchini; cover and cook 4 to 5 minutes or until zucchini is tender. Sprinkle with oregano and salt.
