Chicken Tetrazzini

Ingredients

  • 1 (16-oz) pkg sliced mushrooms
  • 1 (4-oz) jar diced pimiento, drained
  • 1 onion, chopped
  • 1½ lb boneless, skinless chicken thighs, halved
  • ½ tsp pepper
  • ¼ tsp salt
  • 1 (16-oz) jar Alfredo sauce
  • 1 (10.5-oz) can cream of mushroom soup
  • ¼ cup water
  • 3 Tbsp lemon juice
  • 12 oz thin spaghetti

Instructions

  1. Combine mushrooms, pimiento, and onion in a greased 5- to 6-quart slow cooker.
  2. Sprinkle chicken with pepper and salt, and place in slow cooker.
  3. Stir together Alfredo sauce, soup, water, and lemon juice; pour over mixture in slow cooker.
  4. Cover and cook on LOW 6 hours or until chicken is tender. Remove chicken, and chop. Return chicken to slow cooker.
  5. Cook pasta according to package directions; add to mixture in slow cooker, stirring to combine.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • 2 tomatoes, chopped
  • ½ (7-oz) pkg seasoned croutons
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
