Vegetable Jambalaya
Warm Garlic BreadIngredients
- 1 (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
- 1 jalapeño pepper, seeded and minced
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ cups long-grain white rice
- 3 cups low-sodium vegetable broth
- 2 (15-oz) cans low-sodium black beans, drained and rinsed
- 1 (14.5-oz) can petite-diced tomatoes
- 1 Tbsp vegan Creole seasoning
- 3 green onions, sliced
Instructions
- Cook seasoning blend, jalapeño, and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes, stirring often. Add rice; cook, stirring often, 2 minutes.
- Add broth, beans, tomatoes, and seasoning. Bring to a boil; reduce heat, cover, and simmer 18 to 20 minutes or until rice is tender, stirring occasionally. Sprinkle with green onions.

- 1 (10-oz) French baguette (preferably whole wheat)
- ¼ cup vegan butter, softened
- 2 cloves garlic, minced
Side Dish Instructions
- Preheat oven to 350°F. Slice bread at ½-inch intervals, cutting about three-fourths of the way through loaf.
- Mix together butter and garlic; spread between slices. Wrap bread in foil, and bake 10 minutes. Unwrap and bake 3 to 5 minutes longer or until toasted.
