Lemony Arugula SaladIngredients
- ¼ cup chopped walnuts
- 2 cups shredded rotisserie chicken
- 1 cup diced celery
- ⅓ cup mayonnaise
- 1 small apple, diced
- 1 Tbsp lemon juice
- ¼ tsp pepper
Instructions
- Toast nuts in a small skillet over medium-low heat 3 minutes or until fragrant.
- Combine chicken, celery, mayonnaise, apple, nuts, lemon juice, and pepper.

- ½ tsp lemon zest
- 1 Tbsp lemon juice
- 1½ tsp honey
- ½ tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 1 (5-oz) pkg baby arugula
Side Dish Instructions
- Whisk together oil, lemon zest, lemon juice, honey, mustard, salt, and pepper in a large bowl. Add arugula; toss.
