Bacon, Kale, and Red Pepper Scramble
Ingredients
- 8 slices center cut bacon
- 1 red bell pepper, chopped
- ¼ cup finely chopped onion
- 1 (5-oz) pkg baby kale
- 8 large eggs, lightly beaten
- ½ tsp pepper
- ¼ tsp salt
Instructions
- Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp; drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
- Add bell pepper and onion to drippings in skillet; cook 3 to 4 minutes or until tender. Add kale; cook 2 minutes.
- Add eggs; cook, 2 minutes, stirring constantly.
- Stir in crumbled bacon, pepper, and salt; cook, stirring constantly, until eggs are thickened and set.
