Bacon, Kale, and Red Pepper Scramble

Ingredients

  • 8 slices center cut bacon
  • 1 red bell pepper, chopped
  • ¼ cup finely chopped onion
  • 1 (5-oz) pkg baby kale
  • 8 large eggs, lightly beaten
  • ½ tsp pepper
  • ¼ tsp salt

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp; drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
  2. Add bell pepper and onion to drippings in skillet; cook 3 to 4 minutes or until tender. Add kale; cook 2 minutes.
  3. Add eggs; cook, 2 minutes, stirring constantly.
  4. Stir in crumbled bacon, pepper, and salt; cook, stirring constantly, until eggs are thickened and set.
