Pumpkin Spice Latte

Ingredients
- ⅓ cup canned pumpkin puree
- 3 Tbsp brown sugar
- 2 tsp pumpkin pie spice
- 2 tsp vanilla extract
- 2 cups half-and-half
- 2 cups freshly brewed coffee
- Garnishes: whipped cream, ground cinnamon (optional)
Instructions
- Combine pumpkin, sugar, and pumpkin pie spice in a large saucepan. Cook over medium heat 3 to 5 minutes or until simmering, whisking often; whisk in vanilla and half-and-half until smooth. Simmer over low heat 5 minutes.
- Pour mixture into a high-speed blender, and process on high 1 minute or until frothy.
- Divide coffee among 4 mugs or glasses, and top with pumpkin mixture. Garnish, if desired.
