Spinach-Pepper Cheese Dip

Ingredients
- 2 Tbsp butter
- 1 cup diced red bell pepper
- 1 cup diced onion
- 1 (10-oz) pkg baby spinach
- 2 (8-oz) blocks cream cheese, softened
- 1 (8-oz) pkg shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 1 cup mayonnaise
- ½ cup sour cream
- 1 tsp garlic powder
- 1 (11-oz) bag tortilla chips
Instructions
- Preheat oven to 350°F. Melt butter in a large skillet over medium heat. Add bell pepper and onion; cook 4 minutes or until crisp-tender. Reduce heat to low, and gradually stir in spinach until wilted.
- Add all cheeses, stirring until blended. Stir in mayonnaise, sour cream, and garlic powder until blended.
- Spoon mixture into 2 small cast-iron skillets or a lightly greased 1½-quart baking dish. Bake 20 to 25 minutes or until hot and bubbly. Serve with tortilla chips for dipping.
