Ingredients

  • 2 Tbsp butter
  • 1 cup diced red bell pepper
  • 1 cup diced onion
  • 1 (10-oz) pkg baby spinach
  • 2 (8-oz) blocks cream cheese, softened
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 (11-oz) bag tortilla chips

Instructions

  1. Preheat oven to 350°F. Melt butter in a large skillet over medium heat. Add bell pepper and onion; cook 4 minutes or until crisp-tender. Reduce heat to low, and gradually stir in spinach until wilted.
  2. Add all cheeses, stirring until blended. Stir in mayonnaise, sour cream, and garlic powder until blended.
  3. Spoon mixture into 2 small cast-iron skillets or a lightly greased 1½-quart baking dish. Bake 20 to 25 minutes or until hot and bubbly. Serve with tortilla chips for dipping.
