Ingredients
- 2 (5-oz) cans wild-caught tuna in water, drained
- 1 large egg, lightly beaten
- ⅓ cup whole wheat panko breadcrumbs
- 1 Tbsp olive-oil mayonnaise
- ½ Tbsp lemon juice
- 1 tsp dried dill
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- 1½ Tbsp olive oil
- ½ lemon, cut into wedges
Instructions
- Gently combine tuna, eggs, breadcrumbs, mayonnaise, lemon juice, dill, salt, and pepper; shape into 6 (1-inch-thick) patties.
- Cook patties in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Serve with lemon wedges.

- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 (15-oz) can cannellini beans, drained and rinsed
- ½ (14.5-oz) can diced tomatoes, undrained
- 1 (5-oz) pkg baby spinach
- 2 Tbsp chopped fresh basil
- ⅛ tsp kosher salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook garlic in hot oil in a saucepan over medium heat 1 minute; add beans and tomatoes. Bring to a boil.
- Gradually add spinach; cook 3 minutes or until wilted. Stir in basil, salt, and pepper.
