Ingredients
- 12 oz whole wheat penne pasta
- ½ cup olive-oil mayonnaise
- ½ cup sour cream
- 2 Tbsp lemon juice
- ¼ cup chopped fresh parsley
- ½ tsp salt
- ½ tsp pepper
- 4 (5-oz) cans no-salt-added wild albacore tuna, drained and flaked
- 1 (15.5-oz) can organic cannellini beans, drained and rinsed
- 2 stalks celery, chopped
Instructions
- Cook pasta according to package directions; drain and rinse with cold water.
- Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper in a large bowl. Add tuna, beans, celery, and pasta; toss. Chill until ready to serve.

- 1 Tbsp apple cider vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp honey
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 (5-oz) pkg baby arugula
- 3 organic sweet, crisp apples, cored and sliced
Side Dish Instructions
- Whisk together vinegar, mustard, honey, oil, salt, and pepper in a large bowl; add arugula and apples. Toss.
