Sausage-Blue Cheese Pasta

Ingredients
- 12 oz bow-tie pasta
- 1 (16-oz) pkg Italian sausage links, sliced
- 2 Tbsp olive oil
- 2 shallots, diced
- ¾ cup heavy cream
- ¾ cup low-sodium chicken broth
- 1 (5-oz) pkg crumbled blue cheese
- 1 (5-oz) pkg spinach
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook sausage in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Remove sausage, reserving drippings in skillet.
- Add shallots to skillet; cook over medium heat 4 minutes or until tender. Add cream and broth; cook 3 to 4 minutes or until thickened. Stir in sausage, cheese, and spinach; cook until spinach wilts. Serve sausage mixture over pasta.
