Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 1½ tsp lemon-pepper seasoning
  • ½ tsp salt
  • 3 Tbsp butter

Instructions

  1. Sprinkle chicken with lemon-pepper seasoning and salt. Melt butter in a large skillet over medium-high heat. Cook chicken, in batches, 4 to 5 minutes per side or until done.

  • 1½ cups Israeli (pearl) couscous
  • 2¼ cups low-sodium chicken broth
  • 1 (16-oz) pkg sweet potato cubes
  • 2 Tbsp olive oil
  • 1 tsp dried crushed rosemary
  • ½ tsp salt

Side Dish Instructions

  1. Cook couscous in broth according to package directions.
  2. Meanwhile, cook potatoes in hot oil in a large skillet over medium-high heat 8 minutes or until browned and tender. Stir in couscous, rosemary, and salt.
